Classic Frittata
Eggs are our protein and nutrient staples, plus, they can be added in almost every meal. A classic frittata is an easy-to-cook dish and can be a great addition to your summer picnic and gatherings.
Ingredients:
6 large eggs
Chopped, thick-cut bacon slices (at least 4 slices)
1/4 cup of heavy cream
1 cup of shredded cheddar cheese
Small thinly sliced potatoes
2 cups of baby spinach
2 minced garlic cloves
1 tsp. of kosher salt
1/4 tsp. of ground black pepper
2 tsp. of fresh thyme leaves
Instructions:
Arrange the rack and heat the oven to 400°F. Then, whisk the eggs, heavy cream, and salt in a bowl. Next, cook the bacon in a non-stick frying pan on medium-high heat for 10 minutes or until crispy. Remove the bacon then leave at least 2 tablespoons of its fat on the pan.
Put the potatoes in with medium heat, sprinkle remaining salt and pepper, and sauté occasionally for six minutes until lightly browned. After that, put the spinach, garlic, and thyme into the pan and stir for one minute until the spinach wilts. Then add the bacon back to the pan and stir evenly. Spread the veggies and sprinkle the cheese on top and let it melt.
Next, pour the egg mix over the cheese and veggies, settling them evenly, and cook for two minutes. Put in the oven and bake it for 10 minutes or until eggs are set, the inside is cooked, and until the top is brownish.
Cool for a few minutes and pack the frittata in a collapsible insulated picnic basket for your summer getaway!
Smoked Turkey and Cheese Sandwich
A turkey sandwich is a lunchtime favorite. Smoked turkey and cheese sandwich, though, is special. It packs what your mouth and tummy meaty wants. This is ideal for the outdoors and the crowd.
Ingredients:
A large loaf of bread (round)
Thinly sliced smoked cooked turkey
2 oz. of butter lettuce leaves
Sliced cheddar cheese
4 tbsp. of mustard
Instructions:
Horizontally cut the bread in half, hollow out and remove its soft interior from each half – save it to make breadcrumbs.
Spread mustard on the cut bread, then layer the cooked smoked turkey and cheese on the inner bread bottom, and top with lettuce leaves. Put the top on the sandwich, tightly wrap it in two layers of plastic wrap, and cool or refrigerate for at least one hour to a day.

Beer Battered Fried Fish
Seems like you’re getting yourself and others drunk with this recipe but I assure you, you won’t. The beer battered fried fish is a unique picnic dish that everyone will go crazy about and wanting for more.
Ingredients:
2 lbs. of grouper fillets cut into pieces
1 bottle of beer (12 oz.)
1 1/2 cups of all-purpose flour
Vegetable oil
1/2 tsp. of ground pepper
1 1/2 tsp. of sugar
1 tsp. of salt
1 tsp. of hot sauce
Instructions:
Pour vegetable oil into a large oven and heat to 360°. Sprinkle salt and pepper on the fish. Next, whisk flour, beer, and hot sauce in a large bowl. Then, dip the fish in the mixture.
Using tongs, gently lower the fish into the hot oil. Fry the fish in batches, up to three minutes on each side until they’re golden brown. Place the fried fish on a wire rack and keep in a 200° warm oven until crispy.
Cool down for a couple of minutes then pack for your outdoor picnic with family or friends!
