Featured Food Blogger of the Week: Tiffany McCauley of The Gracious Pantry

Tiffany McCauley is a digital publisher, a healthy foodie, and the author of The Gracious Pantry.  She also publishes a personal blog at TiffanyMcCauley.com.  When it comes to cooking, her focus is on cooking from scratch using real food ingredients that people can grow themselves or find in the local store.

She’s California born and raised, and she lives in the beautiful Sonoma County in Northern California.  She is a single mom to an 8-year-old boy whom she calls her Mini Chef.  As a single mom on a budget, she understands the need for simple and healthy ingredients.

1. What inspired you to create your food blog?

It started as a way to track my progress and keep track of family recipes as well as the new recipes I started creating. I was trying to get healthier after having my son and I knew that that starts in the kitchen. But after a while, I realized people were actually reading my blog and trying my recipes! It was very exciting and still is!

2. What are the three most popular recipes from your website? And what is your son's favorite recipe?

The three most popular recipes on my blog are the Roasted Summer Squash, the 2 Bean Southwestern Chicken and the Peanut Butter Pie. My son's favorite is anything that involves dessert. He'll eat anything as long as you call it dessert.

3. Where do you find inspiration when it comes to creating new recipes?

I get inspiration from many places, but most often from the grocery store or my own refrigerator. I blog about what I cook for my family, so it's really a process of seeing what I have in the fridge and creating something from that.

4. If you could describe "Clean Eating" in three sentences or ideas, what would those be?

Clean eating is, at it's core, eating real food. Food that has not been altered by a company. Fresh, real, whole foods that give you lots of nutrients.  Check out her Clean Eating Freezer Meals which is available on Amazon. It's a full color cookbook that will help you easily pack your freezer with healthy meals to enjoy whenever life gets busy.

5. Walk us through a day of your life at work, what do you do?

I never have a set schedule, and that is one of the things I love about blogging. I can work my job around my life, which has been a critical component of work lately.  When Mini Chef is in school, I cook while he's gone and make sure I get lots of photos. Then, once he's in bed, I write my blog posts and edit my photos. During summer however, it's anybody's guess. I work when I can around his schedule.
