1. What is your favorite recipe?
My favorite recipe is my Creamy Italian Salad Dressing. Unlike store-bought salad dressing – and even most homemade dressings – this one is high in fiber and low in ingredients that contribute to weight gain. It tastes fabulous not only on salads, but on lots of other foods too. We eat it on potatoes, pasta, bread, steam vegetables, and more!
2. What can you tell our readers about your Weight Loss Classes?
Oh, they are so much fun! It’s great to make new friends and really connect with participants. I love to see their excitement when they learn that losing weight doesn’t have to be soooo difficult.
I start my weight loss classes by dispelling the most common weight loss myths and fads. I highlight people groups from around the world who have low rates of obesity and we take a look at their dietary patterns. Then I show participants the secrets to reducing cravings and increasing metabolism, and how to not be hungry while losing weight. And I demonstrate how to deliciously incorporate healthy foods that help with weight loss into their diet.
3. What would you say is the biggest misconception about weight loss and healthy diet?
Only one? That’s tough; there are so many misconceptions out there.
One of the biggest problems I see is that people tend to follow fads – whatever is being promoted on the internet is what we believe.
Another common mistake is paying more attention to calories than ingredients. I talk more about this in my post, Are All Calories Created Equal?
And then there’s the misconception that healthy foods don’t taste good. I love helping people learn how to prepare healthy foods so that they actually enjoy it!
4. What is the one splurge food you love to nosh on?
Anything sweet and creamy – so my fruit smoothies and this delicious Non-Dairy Ice Cream and this Tapioca Pudding are some of my favorites.
5. What made you decide to write a healthy food blog?
I love helping people meet their weight loss goals, but I soon had more requests for classes and recipes than I had time to accommodate. With my blog, I’m able to help many more people than I ever could with my classes.
I had a similar ah-ha moment a few months ago when I was creating a meal plan for someone. This meal plan was going to be very helpful for the person receiving it, but it was only going to help that one person. So I decided to make healthy meal plans available on my website … then thousands could benefit from them.
