Featured Food Blogger of the Week: Sarah Jane Parker of The Fit Cookie
Sarah Jane Parker is the creative force behind The Fit Cookie. It’s a blog dedicated to fitness, nutrition, and fun. She is a a wife, mom of 2, ACSM Certified Personal Trainer, Revo₂lution Running Certified coach, PiYo instructor, POPSUGAR Select blogger, and an ambassador for FitFluential, Cocogo, Sweat Pink, Momentum Jewelry, and Girls Gone Sporty.
Her kids have multiple food allergies and she, herself, has her set of foods she can't tolerate. So, she makes it her mission to develop nutritious meals that are affordable and suitable for picky eaters with food allergies.
They live in Wyoming where they can get plenty of fresh air and lots of outdoor activities.
1. Why do you love to cook? And how do you come up with new recipes?
I enjoy cooking because I feel good about making healthy and allergy-friendly foods for my family. I enjoy baking and making desserts the most, but we love to grill outside when the weather is good. When it comes to cooking main dishes and meals, grilling is my favorite way to cook!
I come up with new recipes often by necessity. Almost everyone in my family has food allergies of some kind, so for a long time, the new recipes on my blog came about when I was trying to figure out how to make delicious foods everyone in my family could eat. When those recipes turned out great, I posted them!
These days I mostly create recipes based on new ingredients or ideas I want to experiment with and what I think my readers would really enjoy. I still create new recipes for my family, but we try to eat less dessert these days so I’m trying to post a broader variety of foods beyond desserts
2. What are the kitchen items and gadgets you can’t live without?
I do most of my cooking without any special gadgets these days, but I do love my NutriBullet mini blender. I got one from my mom for Christmas several years ago and it has been amazing!
3. How would you describe your culinary style?
Simple and easy, sometimes bordering on lazy, haha! I try to keep recipes and foods very simple (but delicious!) in our house, and if there are a ton of ingredients or steps in a recipe, I usually skip it.
4. When outside the kitchen, how do you spend your time?
When I’m outside my house I love to spend time outdoors hiking, running, biking, and walking, or I’m at the gym training clients or teaching classes. I love the outdoors!
5. What are your three most delicious recipes?
My favorites are: Strawberry Coconut Truffles, Gluten Free Grasshopper Brownies, and my Grilled Chicken Tacos with Cilantro Crema.
