crispy fried pork

This Crispy Fried Pork is perhaps one of the best pork dishes we’ve tasted. However, there is a trick to cooking it.  The exterior needs to be salty and extra crispy.  The interior needs to be tender, moist, and juicy.  This is a rich combination, one that makes eating a plate of fried pork a seriously dangerous task.  Yes, it should come with a warning.  This poses a clear risk to your health, but oh dear, it is good!  It’s so good that many people have endeavored to perfect this recipe.

INGREDIENTS

  • ¾ – 1 kilo pork belly cut into pieces
  • 1 ½ tbsp salt
  • 1 garlic bulb peeled and crushed
  • 1 small onion sliced
  • ½ tsp ground pepper
  • 4 pcs calamondin or ½ lime juice
  • 3 pcs bay leaf (optional)
  • 750 ml water
  • Oil for frying

DIRECTIONS

1. Place all ingredients in a pan


2. Bring to a boil then simmer


3. Cover the pan then cook in medium heat for 30 minutes or until pork skin is tender


4. Remove pork from the pan, drain and remove excess water to minimize splatters when frying

5. In a pan, heat oil until hot enough for frying. For protection against splatters, place a splatter guard over the pan


6. Fry pork until crispy and golden brown in color


7. Remove pork from pan and transfer onto a plate. Serve with vinegar or spiced vinegar
