Chicken Salpicao

This Chicken Salpicao dish is of Spanish or Portuguese origin. The word “salpicao” comes from the Spanish word “salpicar” which means “to fleck with”. This delicacy is traditionally made by sautéing small cubes of beef with garlic and olive oil and adding Worcestershire or soy sauce to the mix to give it flavor.


 INGREDIENTS

  • 500 grams chicken
  • 2 tbsp hot sauce
  • 3 tbsp liquid seasoning
  • 3 tbsp Worcester sauce
  • 1 tbsp ground black pepper
  • 1 tbsp vegetable oil
  • 2 tbsp butter
  • 1 tbsp garlic, sliced thinly
  • 1 cup garlic
  • 1 pc finger pepper (optional, for garnish)
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1 tbsp chili pepper bits (optional for garnish)

 DIRECTIONS

1. Marinate chicken in hot sauce, liquid seasoning, Worcester sauce, and ground pepper for about 10 minutes.

2. Heat oil in pan and saute 1 tbsp of garlic over moderate heat until golden brown. Set garlic aside.

3. In the same pan, melt butter and saute 1 cup minced garlic over medium heat until fragrant.

4. Add the chicken and set aside marinade.

5. Cover the pan and cook the chicken until done or turns brown.

6. Add the remaining marinade. Let simmer for a minute and continue cooking until sauce reduces.

7. Remove from heat and add finger pepper. Mix well. Then garnish with chopped parsley, fried garlic, and chili pepper bits.
